How to make an incredibly mouth-watering Vietnamese bun bo hue (Hue spicy beef noodle soup)

Bun bo hue is considered to be the special food of the Old Capital of Hue with the spicy flavor creating distinguished taste. Not only is it delectable but the dish is also easy to cook. Let’s follow our own below bun bo hue recipe!


  • 1 kg shank bones
  • 300 grams Hue crab/shrimp patties (chả huế)
  • 2 kg thick rice noodles
  • 500 grams pork knuckles
  • 10 lemongrasses, 1 pineapple, 1 onion, red shallots, Hue paste, 2 gingers
  • Fresh chili, black peppers, sugar, salt, fish sauce, annatto seeds
  • Raw vegetables include banana blossom, lettuce, water spinach, basil, lemon.


Step 1: First of all, clean carefully shank bones, place in a pot filled with water and then boil for 10 minutes. Optionally, you can clean easily the bones by a little vinegar. Clean beef shin shank in the salt water, then wash again in clean water to remove all impurities. Slice shank into square pieces and clean in water. Put all together into pot and boil to simmer.

Step 2: While waiting the broth, peel and slice pineapples into small squares or rectangle pieces, then clean and smash lemongrass. Clean ginger and slightly grill it, put into the broth pot and continue simmering. Mix well cooled boiled water within two teaspoons of shrimp paste, extract the clear broth and discard the bottom part then pour to the stewing pot.

Step 3: In the simmering process, remove the impurities occasionally to clear the water. After finishing the stew, remove pineapple and ginger, add again seasonings until tasty. Put a little annatto seeds to get the stunning golden brown color.

Take out the softly cooked beef shank, soak into water some minutes until cooling totally, take out to drain the water. In fact, the cooling shank will be easy to cut without scratching.

Step 4: Next, heat the oil pan, add minced fresh chili, garlic and red shallots, add annatto seeds to make saté

Step 5: Soak thick rice noodles in 2-3 minutes in boiling water then assemble to the bowl.
